Roasted Patty Pan Squash, Summer Vegetables & ‘Sausage’ Platter
The best part about summer is the produce. So many varieties to choose from, so many ways to cook them. One my favorite ways? Roasting vegetables and serving them with a side of creamy spicy tahini sauce.

I came across patty pan squash and I could not pass up on them. Something about their shape that catches my eye and entices me to buy them. There are a few ways to cook them but for simplicity sake, I decided to roast them with other summer vegetables.
Accompanying these roasted vegetables are pan fried @beyondmeat Hot Italian sausages and creamy spicy tahini sauce (see below for recipe). The combination was simply delightful and the other great thing about this platter? It is an awesome potluck party dish.
ROASTED PATTY PAN SQUASH AND SUMMER VEGETABLES
Makes: 4 servings
ROASTING GUIDE
Please adjust seasoning measurements to your liking.
1. Patty pan squash – 4 small to medium size
Toss with ½ tbsp oil, thyme (1 sprig), salt and pepper to taste.
Roast 425°F for ~15 – 20 mins.
Brush the surface of the squash with some sweetener like maple syrup in the last 5 mins of roasting time.
2. Bite-size potatoes – 1 mesh bag @tastefulselections
Toss with 1½ tbsp oil, thyme (2 sprigs), salt and pepper to taste.
Roast 450°F for ~20 – 25 mins.
3. Carrots – 8 medium size
Toss with ½ tbsp oil, salt and pepper to taste.
Roast 450°F for ~20 – 25 mins.
4. Asparagus – 16 stalks
Toss with ½ tbsp oil, ½ tbsp lemon juice, salt and pepper to taste.
Roast 425°F for ~12 – 15 mins.
5. Cherry tomatoes – 1 dry pint @sunsetgrown
Toss with ½ tbsp oil, 2 garlic cloves (sliced), thyme (1 sprig), salt and pepper to taste.
Roast 350°F for ~15 mins.
SPICY TAHINI SAUCE
Ingredients
juice and zest from 1 lemon
2 tbsp. organic tahini
1½ tbsp. maple syrup or any sweetener
1 tbsp. sriracha @huyfongfoods
1 garlic clove (grated)
1 – 2 tbsp. water
½ tsp. salt or to taste
black pepper to taste
Steps
Whisk all ingredients until well combined. If you like a thinner consistency, add more water a little at a time.
