Udon Noodles with Spicy Peanut Tahini Sauce

Soft, chewy and smooth udon noodles with refreshing crunchy veggies doused in nutty sauce. This is the definition of comfort food.

Last week I made spicy peanut tahini sauce to go with wontons. Since I love this sauce so much I decided to make the sauce again. Only this time, I tossed it with my other favorite food: udon noodles.

To balance out soft chewy noodles and thick nutty spicy sauce, I added freshly cut vegetables, crushed peanuts, sesame seeds and lime juice.

The verdict? This simple dish was just perfect. Delicious, satisfying and refreshing.



Makes: 2 – 3 servings


½ cup shredded red cabbage

½ cup julienned bell pepper

¼ cup julienned cucumber

3 tbsp. chopped roasted peanuts

1½ tbsp. chopped cilantro

1½ tsp. roasted sesame seeds

198 gm / 7 oz. dry udon noodles (cooked according to the instructions on the package, drained)

2 tsp. organic tamari reduced sodium @sanjtamari


  1. Add the drained udon noodles, vegetables, peanuts, sesame seeds, tamari and ¼ cup spicy peanut tahini into a mixing bowl.

  2. Toss gently until well combined.

  3. Place the tossed noodles on a large serving dish.

  4. Garnish with additional chopped cilantro, scallion, peanuts and sesame seeds.

  5. Squeeze some lime juice over the noodles before consumption.
